Cooking DIY: coconut icebox cookies

INGREDIETS
1/2 cup butter
1 cup white sugar
1 egg
2 teaspoons vanilla extract
1/2 teaspoon coconut extract
1 3/4 cups sifted all-purpose flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1 cup shredded coconut

DIRECTIONS
1. Cream butter or margarine, add sugar and continue creaming until light and fluffy. Stir in egg, vanilla and coconut flavoring.

2. Sift the flour with the salt and baking soda. Alternately add the flour mixture and the shredded coconut to the creamed mixture. Form dough into sausage shapes about 2 inches in diameter. Tightly wrap dough and chill for several hours or overnight.

3. Preheat oven to 375 degrees F (190 degrees C). Remove dough form refrigerator and cut into 1/4 inch slices. Bake on an ungreased cookie sheet for 10 minutes.

依稀记得前些日子有网友寻做饼干的recipe,特推荐一个自己比较喜欢的。这也是我最近找的,接连做了三次。做法很简单,喜欢酥酥口感的朋友不妨一试。

几点心得:
1) 西点中的 butter 可用 margarine 代替,我用的是vegetable oil, 口感也很好;

2) 糖的用量可酌减,我第三次做的时候用了2/3 cup (之前用的是3/4 cup),仍觉得偏甜,似乎还可以再减,下次试试 1/2 cup;

3) baking soda 的使用与否,并不影响口感;

4) vanilla extract, coconut extract 可有可无;

5) 没有 shredded coconut 亦无所谓;

6) 不讲究卖相的话,可以直接进烤箱,不必入冷藏室数小时。
