In the first page of 北京使馆网站 instuction part, there is a bold statement stating that all documents submitted must be in French or English.
That means: If you submit a document in chinese, you must have a french or english version with it.
As for 申请人雇主的准假信, I type a English version by myself and send it together with chinese version to the employer. Employer stamps the same stamp and sign on both letters. Then it is done.
As for 银行存款证明, normally banks in china can present English documents.
I did not 证明 for these two documents.
For the self-employer, I have no idea! sorry!
