如何酿制葡萄酒

Anyone sell me Paklab Duo at cost?

Anyone has the Paklab Duo Kits that's less than 1 year old, sitting around and will let go(=sell) at cost??

I'm estimating the next sales to be ~Feb but I'd like to start now.  Their Duo kits are too light for us, but I'd like to try blending: (Blending is supposed to increase complexity)
- Paklab Cabernet Sauvignon with AR Shiraz,  
- Paklab Merlot with a more expensive Cab.
Guessing they MAY turn out OK.  Don't know until I try, ha!

So, if anyone can help me out, please reply or PM.  Thanks in advance!!


p.s. In case any of u enjoy the Paklab Duo, please don't put yourself down. Do consider yourself lucky as u can enjoy light wine.  It's your wine, as long as u like it, that's the only thing that matter!

2nd tasting of AR Shiraz (MP's 圣诞酒)

Small goup lunch at office, they requested 1 bottle per person.  Of cause  . . . . . . . . . . . . . . . .   NO!!  :mad:

1x750ml 2.2 yr old. Amarone, $150/kit, decanted for 45 min.
1x750ml 1 day old AR Shiraz, decanted for 45 min.

'Decant in office' = pour into water bottles, about 3-4" wide.  Left top open for 45 min. (Ideally, 1-2 hours)

Over 10 people, mostly Quebecers, including one from wine making family, another one love tasting wines.  The said lunch were wine, beer, cheese, cold cut and salads.  Answers from everyone were:

==> Have never tasted home made wine like that!  (=excellent+excellent)

Trick for serving wine, open the best ones first.  After 1st few good bottles, then open the bad ones :p     , they could no longer tell.

同樣不会输入中文, 只要肯化50刀,用手寫板寫,简繁都可以.还可以寫出香港字.

加拿大特产= Wine Kits (酿酒用的浓缩葡萄汁)!

加拿大对酒业的高税收, 帮助建立了这个特殊的Wine Kits 行业!Over 90% of wine making concentrates/kits in the world are made in Canada, although most juice comes from US.

p.s. 真冰酒是由德国发明, 是德国特产(some years are not cold enough in Germany), 加拿大的只能说是土产!  假/仿冰酒才是加拿大特产!

MP 自酿 (2) - 酿酒 基本工序(不写) 有关的

酿酒 基本指示(=instructions=酿酒工序) 不写了,look for them inside your box or check web sites of manufacturers.  只写基本指示不写的!

Follow instructions TO THE LETTER, your beer/wine kit will be OK.  If anything goes wrong, most manufacturers provide guarantee. Double check wordings on your box or instruction sheet.

Choose retailer who will help you!

Beer or wine, before you buy your kit, visit few more stores.  Choose the retailer who is more friendly to u.  Buy from there, even if u have to pay a few more $.

While most instruction sheets are written in details + well tested, I'm sure u'll still have question that need answer, your alternative(s):
- call/email manufacturer, (u will need to wait if u don't call during office hour)
- call retailer, (u will find this extremely helpful, even if u have friends)
- call your friend(if any) who know beer/wine making.

Summary of basics

自酿 葡萄酒 from must - stir, wait, syphon(day7), wait, syphon(day 21/30), wait, syphon(day 60/90)     wait, bottle(8 months) done.

Believe it or not:  a Portugese store said bring the bucket of frozen juice(=must) home, open the red cap, leave it on kitchen floor for 2 or 3 months, then bottle.  
MP爱酒如命, 一定不这样做!

自酿 葡萄酒 from kit - 慢慢写 . . . . .

Separate buckets for wine vs. beer

In case u have extra bucket(s), use different buckets for beer and wine making. Believe wine making leaves stronger smell in plastic bucket. Anyone knows more, please share info.

Day -1, Battle of Waters

Very often, u will hear the importance in using good water in making beer/wine kits.  Some people even swear that they can taste the difference.  Generally Distilled Water and Spring Water are considered good.  Mineral Water cannot be used as too much minerals will obstruct fermentation.

As per a technical manger from one of the manufacturers - leave regular tap water out for 24 hours, the Chlorine will dissipate, and use that.  The only chemical difference is few extra grains of salt.

Arguments + arguments . . . . . the bottom line is . . . . .  if the water is good enough for u to drink, it is good enough to make wine.
