如何酿制葡萄酒

圣诞节Costco Wine Kit, 造红/白葡萄酒 - 自酿~$1/瓶, 代酿~$2.5/瓶

The last day of sales on Wine KitS will be Oct. 5(Sun).  Those of u who want to have wine ready for x'mas need to start now.  U will not find any wine kit at Costco till next sales, may be end Nov. or Feb, 09.

***  These are LOW END wine kits, but better than most supermarket wine. ***

There are 2 manufactuerers, sold at different Coctco:

A.  Paklab at Central Market, http://www.paklabproducts.com/pa ... .East.Fall.2008.pdf
*** Do not buy the "better ones" in bucket, they all require 1 year aging.  Almost undrinkable if not aged. ***
e.g. 1 Merlot+1 Cab. Sauvignon, ~11-12% alcohol, ~$64.99-$15(discount)+7.5% of $64.99 ~=$55 for 60 bottles.

B.  Argentia Ridge at Brossard/Bridge/West Island, http://www.argentiaridge.com/cgi ... =yes&news_id=27
*** Their wine kits has more body than Paklab., I recommend u to find a friend to split the 2 kits ***
e.g. 2  Merlot, ~12-13% alcohol, ~$69.99-$14(discount)+7.5% of $69.99 ~=$61 for 60 bottles.

All Costco wine kits include corkS, caps +labels.

I only have time to give u information, WILL NOT organize any making wine together thingie like 2 years ago.

For info. on 代酿酒, I'm only aware of 1 place that's willing to do it in Montreal.  I need a volunteer to help me PM address.  (I assume it's not allowed on Sino. ? advertisement conspiracy?   :confused:  :confused: )

Those of u who are interested in these products, please subscribe yourself on their mailing list ON THEIR WEB SITE, to receive eMail on upcoming sales.

*** They call it Sales/Road Show - in reality, u can only buy those kits during that period of time.  Go a few days after it begins, as sometimes it takes Costco people a few days before putting kits on the floor.  Once sales is over, everything is shipped back to manufacturers  ***

Those of u who go to Central Market, see if there is CD.  Sometimes the manufacturer hand out free wine making video on CD during Road Show.

Reminding those who are interested:  U need to buy your wine kit at Costco coming Sunday or before.  By Monday, they'll remove everything.

感兴趣,但没有搞懂,当时只是买corkS, caps +labels吗.什莫时候拿到酒,等酿好后才拿,还是当时就拿,一次买60瓶,有人愿意share吗

"什莫时候拿到酒,等酿好后才拿" = 代酿

A.  自酿
1.  Buy wine kit from Costco
2.  Bring it home to do it yourself
3.  U need wine making equipment (~$50-100)

B.  代酿
1.  Buy wine kit from Costco
2.  Bring it to wine making store that provide Brew on Premise(BOP service)
3.  Pay them service charge right away, sign 代酿 contract
4.  They'll call u in 4-6 weeks to go back to store with your empty bottles to do bottling yourself (takes about 30-60 minutes)
(MAKE SURE your wine kit BOX is in good shape, else they will NOT make it for u.  Paklab's packing is OK, Argentia Ridge packing will fall apart right after u tear open the plastic wrapping)

Just remember 1 more BOP, the one in Lasalle charge $35/batch(=28 bottles), the one on Hwy20/St. Jean charge $45/batch(=31 bottles, corks included).   Difference is just MORE vs. LESS water.  I think they'll charge u same price even if u bring your own corks, check with them yourselves.

X'mas Wine (圣诞酒:惊+喜!)

Just bottled my Christmas wine, Argentia Ridge Shiraz.  In Quebec, only sold at St Jerome Costco.  
Cost $69.99-$14Discount+$5.25QST for 2 kits, ~$1.04 per 750ml bottle.  
Replacement cost @~$10, but NOT FOR SALE.

When bottling, the wine tasted completely water down and off dry = I could taste water + sugar.  It broke my heart!!  :frown:  :frown:  :frown:  Bottom of carboy poured through funnel into a beer bottle with easy cap.  Drank that at supper, completely changed into a mellow nice wine, sufficient body.        
==> Lesson learned:  this particular batch needs decanting (at least when drunk young).

Decanting is required for old good wine to: (pour slowly)
- "filter" settlement,
- help open up the bouquet

Decanting can also be done to young wine to: (pour quickly, bottle bottom up)
- open up bouquet,
- add ~1year of aging to new wine.("specialists" said that, not me)

This ends my experiments on basic Costco wine kits, from now on Blending, ha!!  
(other experimentS done, may start new postings on Cooking forum WHEN I find time.)
